I picked up some chorizo sausage at the St Lawrence Market on the weekend. Along with some eggs they make a nice breakfast burrito.
Chorizo and Scrambled Egg Burrito
- 1/2 chorizo sausage (casing removed)
- 1 egg
- 1 flour tortilla
- 1 tablespoon cilantro (chopped)
- Cook the chorizo in pan.
- Add eggs & scramble.
- Add cilantro, mix and remove from heat.
- Place meat, eggs & toppings in tortilla.
Option: Fill with your favourite taco style toppings like salsa, sour cream, cheese, lettuce, tomatoes, green onions, etc.
