Sun Dried Tomato Hummus

Hummus is a dip that is made from pureed chickpeas, tahini, lemon and garlic. It is great in its base form but you can also add other flavours to it. Normally I would make this version with sun dried tomatoes but this time I made it with the oven dried tomatoes that I had left over. It goes well with toasted pitas and makes a great snack.
Ingredients:
1 (19 ounce) can chickpeas
1/2 cup sun dried tomatoes (or oven dried tomatoes)
2 cloves garlic
1/4 cup tahini
1/2 lemon (juice)
olive oil to taste
salt and pepper to taste
parsley to taste (chopped, optional)
Directions:
1. Puree everything in a food processor until smooth. Add some water (or more olive oil) to bring it to the consistency that you like.
2. Serve garnished with chopped parsley and olive oil to taste.

I'm so boring, I always have plain, ordinary hummus. This is a great idea.

Kevin, looks good. I just made some plain hummus the othe day, wish I had thought of using some of my slow roasted tomatoes.
Isn't home made hummus the best? It always tastes better than the best quality store bought. This has inspired me to make roasted red pepper hummus! Thanks!
