Roasted Cauliflower

I had heard a lot about roasted cauliflower and how good it was. I had even heard it compared with popcorn. (Perhaps that is because it looks a little like popcorn. I had always just chalked it up as a way to try to get kids to eat healthier.) When I made my roasted cauliflower and red pepper soup I made sure to try some of the roasted cauliflower and it was pretty good. Good enough to get another head of cauliflower and roast it up to snack on. I enjoyed it by itself but I imagine that it would be good with dukkah or curry powder, or even dipped in hummus.

Ingredients:
1 head cauliflower (cut into florets)
2 tablespoons olive oil
salt and pepper

Directions:
1. Toss the cauliflower florets in the olive oil with the salt and pepper.
2. Arrange the cauliflower florets in a single layer in a baking dish.
3. Roast the cauliflower in a preheated 400F oven until lightly golden brown, about 20-30 minutes.

I love roasted cauliflower! I add some chopped garlic for the last 5 minutes of roasting, then dust the whole thing with parmesan when it's done. Yum.

Hi Kevin-- My,this looks so good! and your idea to dip it in curry reminded my of a favorite cauliflower recipe from Madhur Jaffrey's Indian Cooking (1982): Phool gobi aur aloo ki bhaji (Cauliflower with potatoes), which she says is a "comforting 'homey' dish that most north Indians enjoy." I can see why.
Only about three months until I'll have some fresh cauliflower from my garden! Talk about delayed gratification.

They look beautiful. Roasted cauliflower is one of my FAVOURITE things. There was a time earlier on this year where nearly every single dinner I blogged about featured roasted cauli on the side...I love it in a salad, with roasted parsnips, capers, rocket(or arugula as you might call it) and cherry tomatoes.

I'll have to try roasting some cauliflower. I've saved a few recipes for it over the last couple of years but have never yet tried it.
