Sweet Potato Wedges

The other day I made french fries at home for the first time and they turned out great. I have seen a few posts about baking fries and I wanted to try it and compare them to fried fries. I thought that sweet potatoes would go well with the spicy bulgogi burgers and I thought that cutting them as wedges would allow them stand up and bake nicely on both sides. Baking fries seems to be as easy as tossing the cut potatoes with some some oil along with any spices and/or herbs that you desire. In keeping with the Korean theme of the meal I baked the potatoes with some Korean red chili flakes known as gochugaru. The baked sweet potato wedges turned out really well. They were not as crisp as the fried fries but they were slightly crisp and the insides were nice and soft and warm and sweet and good. I served the sweet potato wedges with some ketchup with gochujang mixed in. The gochujang ketchup was really good. The sweetness of the ketchup paired well with the spiciness and flavour of the gochujang. Overall I really liked the baked sweet potato wedges.

Ingredients:
2 sweet potatoes (cut into wedges lengthwise)
2 tablespoon olive oil
1 teaspoon gochugaru (Korean red chili flakes, optional)
salt to taste

Directions:
1. Toss the sweet potato wedges in the oil, chili flakes and salt to coat.
2. Place the wedges, skin side down, on a baking sheet.
3. Bake in a preheated 375F oven until golden brown and tender, about 30 minutes.

Love Sweet Potato, when I was growing up in Bali, this was a common snack after school. It was just plain deep fried sweet potato.

I do like my occasional diet of sweet potato (I just don't like them boiled ) and these looks amazingly yum!

I have to tell you again how much I love this whole meal: bulgogi burger, sweet potato wedges, and the gochujang dressing, which can go on a variety of vegetables. You eat well! Kudos! I admire you for taking the bull (of having the same meals over and over again) by the horns, so to speak.

Oh Kevin I'm so glad you made these. Sweet potato fries are my fav. I make these a lot. I slice mine really thin and then deep fry them in peanut oil.
Next time you want to experiment with sweet potatoes try deep frying them in peanut oil and season them with salt, really good.

These look gorgeous Kevin! I usually do potatoes this way, but I cheat and give them a blast in the microwave first, to speed things up. I like the idea of using sweet potatoes.

I wondered about how crisp they would turn out. I'm now convinced that it's going to be near impossible to get a sweet potato fry to have the same crispness as a russett. The closest I've come is dipping them in egg whites before I bake them. I thought maybe fried they would be different.

They look delicious and I'll forgo the crispness for the flavour any day.

Love the sweet potato fries, I had some delicious (deep-fried, though) ones at TheWorks Burger Bistro in Ottawa once. Soo perfectly crispy and salty/sweet! Haven't tried the Korean pepper yet, must see if I can find it!

I do something similar and just love to have them as a side. Its like fries but so much healthier. I use a different rub (similar to what I use on things like ribs) and broil them just shy of totally cooking them so that they taste cooked but still have some firmness to them since its so easy to turn them into floppy mush.

Kevin - I looovvve baked fries. I went on a kick last month where I ate them everyday.. maybe not the best move. I usually cut up some yukon golds, toss with olive oil and sprinkle with s and p. then i make a tzatziki as a dipping sauce. yum yum.

When I was driving across the South-East USA this summer, several restaurants offered sweet potato fries. They really were so much yummy, heartier, and more interesting than normal fries. And when you bake them, they're healthier too!
