Chocolate Zucchini Bread


The farmers market has been overflowing with zucchini lately. They have so much that they are quite literally giving it away! This weekend when I picked up some zucchini at the farmers market they threw in a few extra as I paid. The question was: What was I going to do with all of this unexpected extra zucchini? The first thing that came to mind was a zucchini bread which is always a nice and easy way to use some zucchini. This time however I wanted to try a chocolate version of the zucchini bread. I pretty much just took my standard zucchini bread recipe and added cocoa powder. I kept the walnuts in the bread and added some chocolate chips for even more chocolaty goodness. The chocolate zucchini bread was as easy to make as mixing the ingredients and baking and it turned out wonderfully. I could not resist slicing the bread and trying a piece before it had cooled down from the oven. The chocolate chips were still melted from baking and the bread was nice and light and moist and good! One of the things that I like most about making quick breads like this is that now I will have quick and easy breakfasts for the rest of the week.

Chocolate Zucchini Bread

(makes 1 loaf)
Printable Recipe

Ingredients:
1 1/2 cups zucchini (grated, squeezed and drained)
3/4 cup brown sugar
1/4 cup oil
1/2 cup vanilla yogurt
1 egg
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cocoa powder
1/2 teaspoon cinnamon
1/2 cup walnuts (chopped)
1/2 cup chocolate chips

Directions:
1. Mix the zucchini, sugar, oil, yogurt and egg in a bowl.
2. Mix the flours, baking soda, baking powder, salt, cocoa powder and cinnamon in a bowl.
3. Mix the wet and dry ingredients.
4. Mix in the nuts and chocolate chips.
5. Pour the batter into a greased 5X9 inch loaf pan.
6. Bake in a preheated 350F oven until a toothpick pushed into the center comes out clean, about 50-70 minutes.

I love quick breads, too. I have a recipe that starts with a standard base, but then gets transformed every time depending on what final ingredients you use. The combinations are endless. One of my favorites is zucchini with walnuts. I've never made it with chocolate before. But I will now!

I do love chocolate zucchini bread Kevin. What first came to my mind is that if the farmers had have sold me some zucchini flowers they would not have needed to be practically be giving the zucchini away this time of year...wink.

Mmmmm, looks great.
And it's a great way to sneak veggies into the kids. Also zucchini muffins. Shredded or chopped zucchini also is a good ingredient for chili. Also use surplus zucchini in baked parmesan. (I love eggplant parm, but my co-workers used to bring me in giant paper grocery bags of their zucchini crops, so I'd make zucchini parm and bring it in to the office. It went over pretty well.)

I've been trying zucchini bread recipes all summer, and I think this will have to be the next one. I love using yogurt for moisture in quick breads like this, and I haven't tried a chocolate zucchini bread yet.

I love chocolate zucchini anything, although I only made something once with this combo. I love the look of your scrumptious bread and can really see this becoming a regular in our house. Delicious bread, great recipe! I'll bet that little bit of vanilla yogurt adds some super flavor! Love it!

I completely agree. There is a ton of zucchini at the farmers markets here in Pittsburgh too. In fact, I bought a couple yesterday. I like the change with the cocoa. Plus, the yogurt makes it feel healthier.

This bread is amazing! I used all wheat flour and it was still very moist. As a mamma of a picky veggie eater, I try to sneak them in anytime I get the chance. Our whole family loved it.

just pulled this recipe out of the oven and put the first warm bite into my mouth. perfect. since I had an extra zucchini on hand I gave this a go. the only change I made was substituting white choc. chips for the walnuts. excellent.

I made this last night. It is so good! The cinnamon makes it complex and even more enjoyable. I used dark chocolate cocoa powder, so it is super rich! Yummy.

I made this on Thursday and took it to a party, where people went nutty-nutty-cocoa-puffs over this. It has a great crusty top, and the inside is moist and cakey. The walnuts are brilliant -- don't leave them out.

OK EWWWW THAT LOOKS SOO NASTYYY. DONT MIX CHOCOLATE WITH VEGETABLES BECAUSE THATS JUST TRYING TOO HARD, YOU CANT HAVE FOR EXAMPLE A CHOCOLATE COVERED ZUCCHINI BUT YOU CAN HAVE A CHOCOLATE COVERED STRAWBERRY, SO JUST SWITHC THE ZUCCHINI FOR STRAWBERRIES AND I WILL BE HAPPY. My cake really turned out well! I loved the moist texture..i used 1 and 1/2 cups of self-raising wholemeal flour and omitted the baking powder instead..however the loaf was so crumbly the entire slice just fell apart as i cut into it...it didnt score in presentation! could you give me some tips on that??

diana: In general wholemeal flour results in denser and drier final products. For this reason, when replacing all purpose white flour with wholemeal I like to keep it to 50% or less. When using all wholemeal flour you can sift it a few times and slightly increase the amount of liquid in the recipe to counteract those affects.

Oooh, my GOODNESS. I made this, along with your Cinnamon quick bread, for a hospitality table for our band directors. I would suggest adding one small item to the ingredient list - a GALLON JUG of milk for serving on the side. This is absolutely divine. I pulled more zucchini out of the freezer from my bumper crop this summer just so that I could make this again, along with your Zucchini Blueberry Bread. Thank you for the delicious recipe!
