Chipotle Lime Shrimp

Chipotle Lime Shrimp

I could not stay away from shrimp for too long and now I'm back with a super simple and tasty way of enjoying shrimp in the form of chipotle lime shrimp. The smoky chipotle chilies, lime and cumin bring the flavours to the prawns along with a nice amount of heat which is mellowed out by a touch of sugar. Along with the lime, the cilantro adds a really nice freshness to the shrimp. I could easily polish off a batch of chipotle lime shrimp as they are but with the texmex flavours they go really well in many texmex dishes including; tacos, taco salads, quesadillas, etc. You could add the smoky chipotle flavour to the marinade either in the form of chopped up chipotle chilies in adobo sauce or you could easily use some ground up chipotle chili powder. Right now it is still warm enough to cook them on the outside grill but you could just as easily use a grilling pan when the days get cooler.

You rocked these Kevin! I might have to make a batch of these up these weekend. How was the heat level, moderate?

Once again I have to come out of the shadows that I typically lurk amongst to say... to say, I did Chipotle Lime Ribs Today. Weird...very weirdly coincidental. GREG

This is another great recipe, Kevin! I like that you actually used the tasty adobo sauce that comes with the chipotle peppers. So often recipes just call for the peppers and the sauce is wasted.

Hi, a new reader of your blog and a new resident in Toronto...I want to know where do you shop typically for your food supplies? Do you buy your seafood somewhere and your vegetables/spices somewhere else? Happy to have discovered your tasty blog.

I've got to try the adobo/lime combination on something...Tofu? Beans? Vegetables? Roasted potatoes? And an awesome photo, too!

Sounds delicious! I've always had trouble with my chipotle chiles in adobo.. you never know how spicy they are going to be!!! sometimes 1 is enough... sometimes 2....

suzielarose: I normally get the regular stuff like milk, eggs, bread, canned goods etc. at Food Basics as they are cheap. I then head down to the farmers market at the St Lawrence market on Saturday to get any seafood, meats, in season fruits and vegetables. There is a nice specialty import shop in the basement with lots of hard to find ingredients as well. If I want some good feta I head up to Greek Town on the Danforth.

Shrimp -- yes. Lime -- Yes. Chipotle -- yes. Sounds delicious!

You mention using a powdered form of chipolte. How much would you use to equal the one chipotle chili in the recipe?

Kevin said...

Sue: Use 1-3 teaspoons of the dried chipotle chili powder instead of the whole chipotle chili in adobo depending on how much you like heat.
