Brussels Sprouts with Bacon, Cranberries and Pecans


Brussels sprouts are one of my favorite winter green vegetables and they make for great side dishes. You can steam them, boil them, roast them or saute them. You can serve them whole, sliced or even shredded. You can add so many things to them to make them interesting and each time you can try something new. You really can't go wrong with starting with some bacon as I have done here. One of the good things about adding bacon is that you can toss the sprouts in some of the bacon grease adding a ton more bacon flavour to the dish. I know, I know, green vegetable side dishes should be healthier. :) With the holidays still on my mind I finished this brussels sprouts dish off with some toasted pecans and some dried cranberries.

Brussels Sprouts with Bacon, Cranberries and Pecans

(makes 4 servings)
Printable Recipe

Ingredients:
2 slices bacon (cut into 1/2 inch slices)
1 shallot (diced)
1 pound brussels sprouts (cleaned, quartered, blanched and drained)
salt and pepper to taste
2 tablespoons dried cranberries
2 tablespoons pecans (chopped)

Directions:
1. Cook the bacon in a pan and set aside reserving 1 tablespoon of the bacon grease.
2. Add the shallots to the pan and cook in the bacon grease and saute until, tender about 3-5 minutes.
2. Add the brussels sprouts to the pan, season with salt and pepper, toss in the grease and saute for a minute.
3. Remove from heat and mix in the cranberries and pecans.

I had some brussel sprouts earier this week, too. I think i'll have to add the bacon next time I cook some up. Actually, I have all the ingredients needed. Why didn't I think of making this? ;-D

I look at all the various ways to fix Brussels sprouts, and think that I might like some of them. So, I copy and paste into my cookbook program - and then when I buy fresh sprouts, I only want them steamed with a little butter. That's my most favorite way to eat them and just can't get myself to try any other way. I bet your recipe is wonderful, though!

Yeah, I love brussels sprouts. Maybe because I never had them as a child. And I hear you on making the healthy green vegetables a little less unhealthy, but a bit of bacon never hurt anyone. Except ,maybe, for the pig.

Bacon and brussel sprouts are the perfect pairing. Love the tartness from the cranberries and crunch of the pecans. A great dish, Kevin, that will be on my Thanksgiving table.

I love brussels sprouts but I have to admit I'm normally a boring girl when it comes to them. I often just roast them simply with salt and pepper and thinly sliced garlic. I'm wishing I had some on hand because that looks like a great variation.

Thinking alike again! I posted something very similar today. Of course you really can't go wrong with bacon and Brussels, right? And nuts are a natural addition.

I really should try the blanching method of cooking them. I know it is more traditional but it also sounds like more work. Do you like the flavours better then if you roast them?

Katerina: I find that roasting the brussels sprouts has the best flavour but it takes less time to blanch them so I often end up doing them that way.
