Kimchi Chicken Salad Sandwich

After waiting for a long month my new batch of kimchi was finally ready and I knew exactly what I wanted to do with it to start. After the success of the kimchi egg salad sandwich I wanted to try a chicken version and as luck would have it I had just stumbled across a container filled with leftover cooked shredded chicken in the freezer. I pretty much just used the same recipe substituting in chicken for the egg. I cooked some bacon in a pan and then slightly caramelized the kimchi in the bacon grease to impart it with its flavour while eliminating any excess moisture to prevent the sandwich from getting soggy. After that it was as easy as mixing the chicken salad ingredients and assembling the sandwich. The kimchi chicken salad sandwich was just as good ans the egg salad sandwich version! I certainly have been having fun adding kimchi to dishes that I enjoy all the time.

Kimchi Chicken Salad Sandwich

(makes 1 sandwich)

Ingredients:
2 strips bacon (cut into bite sized pieces)
1/4 cup kimchi (drained and chopped)
1 tablespoon mayonnaise
1/2 tablespoon gochujang
1/2 cup chicken (cooked and shredded)
1 green onion (sliced)
1 teaspoon sesame seeds (toasted)
2 leaves of lettuce
2 slices tomato
2 slices of bread

Directions:
1. Cook the bacon and set aside.
2. Saute the kimchi in the bacon grease until caramelized, about 3-5 minutes.
3. Mix mayonnaise and gochujang in a small bowl.
4. Mix the bacon, kimchi, gochujang mayo, green onion and sesame seeds.
5. Assemble sandwich.

Mmmm....what a delicious sandwich! I cooked kimchi chicken yeaterday and made another big batch of kimchi, some for myself and some to give to a friend. I love Korean food!

What!? This is very clever! The cool thing is that you could make the same sandwich two weeks straight with the same batch of kimchi and they'd taste totally different. I think I'd prefer week one's...

I tell ya, with this phenomenon of kimchi lately, I'm thinking you could put this stuff on pretty much anything and create something great. What a way to turn the usual staid chicken salad into something new and bold. Love it!

Saveur magazine just did an article on the virtues of Kimchi with various different kimchi recipes so I've been toying with the idea of making my own which I see you have done. You've come up with some raelly creative uses for it on your blog. Now I HAVE to try making my own. Thanks for the inspiration!

The cook at my new school makes THE best Kimchi. I'd forgotten how good the stuff is! Intrigued that you are making your own - I don't think I'd have the patience for all that fermentation!

Hi, this looks amazing! I recently found your blog and really enjoy it. I made the goat cheese/olive marinara sauce yesterday and loved it. I especially love a lot of these korean dishes. I'm korean myself and have been thinking about these flavor combinations for sometime too!
