Bacon Wrapped Buffalo Chicken Jalapeno Poppers

A little while ago I came across a recipe for bacon wrapped buffalo chicken jalapeno poppers on Copy Kat Recipes that sounded so good! Unfortunately I was all snacked out after the big football game so I very reluctantly set the recipe aside for another time. Although I resisted making them for a while, over the weekend I broke down and made them using some leftover cooked shredded chicken from the freezer. I did not really stand a chance, I mean this recipe combines two irresistible snacks, jalapeno poppers and buffalo chicken wings, into one and then wraps them up in bacon and I just had to find out how amazing the combination was!

I made a few changes to the recipe starting out by pre-roasting the jalapeno peppers a bit to help ensure that they are nice and tender by the time the bacon is done cooking. I commonly like to pair blue cheese with buffalo chicken so I added some to the stuffed jalapenos but I went easy on the blue cheese and mellowed it out with some cheddar for those that are not as appreciative of blue cheese as I am. To make up for it I served the bacon wrapped buffalo chicken jalapeno poppers with some blue cheese sauce for dipping and I also provided carrot and celery sticks for even more dipping pleasure.

Bacon Wrapped Buffalo Chicken Jalapeno Poppers

Jalapeno peppers stuffed with spicy buffalo chicken and blue cheese and wrapped with bacon!


Servings: make 4 servings

Prep Time: 5 minutes
Cook Time: 35 minutes
Total Time: 40 minutes

Ingredients
  • 12 large jalapenos, cut in half with seeds removed
  • 1 cup cooked chicken, shredded or diced and warm
  • 1/4 cup hot sauce (such as Frank's Red Hot)
  • 1 tablespoon butter, melted
  • 1/4 cup cheddar cheese
  • 1/4 cup blue cheese, crumbled
  • 12 slices bacon, cut in half
  • 1/4 cup blue cheese dressing or ranch dressing (optional)
Directions
  1. Place the jalapenos in a single layer on a baking pan with the cut side down and roast in a preheated 350F oven for 10 minutes.
  2. Mix the hot sauce and the melted butter and then mix in the chicken.
  3. Fill the jalapenos with the buffalo chicken, top with cheese and wrap with bacon securing everything with a toothy pick.
  4. Bake in a preheated 350F oven until the bacon is cooked, about 20-25 minutes.
  5. Serve while still warm with a side celery and carrot sticks and some blue cheese sauce for dipping.

Option: Replace the cheddar with cream cheese.

Those look amazing! So many of my favorite snacks in one bite. I will be doubling the blue cheese and leaving out the cheddar when I make them. I love blue cheese.

Hi Kevin! I need your help, I'm lost in recipes and I just keep getting more confused...
I'll host a dinner for 11 people tomorrow evening. I'm planning to have some starters and then four cheese spinach pasta and chicken as the main course. However, I'm soooo confused about the chicken. I want to serve the pasta and chicken together, so the flavours should be in harmony. What kind of a chicken recipe would you recommend? I'm inclined to your maple/mustard chicken but I'm not sure how well it would go with the cheesy spinach pasta. should I go for something with pesto? so unsure... please help!! :)

Yeah, I did as many others and left the cheddar out of mine, but in others I added it. Also, for the kids, I used similarly shaped sweet pepper that are sold in packages at the grocery store. They are so festive during Christmas! These things are so awesome and always such a huge hit!!!!

I've tried a recipe similar to this, but without the additional chicken on the inside. I would like to try this one, because it adds a little more substance to dish. Great appetizer, once you've had something this good, it's hard to go back to those nasty frozen jalepeno poppers that you're supposed to bake. Yucky!

How spicy are these? Jalapenos PLUS hot sauce... I think I'll try them with cream cheese instead of butter and cheddar. Cooked some extra chicken last night just so I could try this recipe :)

Miss C: They are on the spicy side. :) Filling them with more cheese will help offset the heat along with dipping them in a blue cheese sauce. You can easily cut back on the hot sauce to lessen the heat as well.

Looks like the ratios are a bit off, but it sounds/looks DEELISH!!! 24 jalapenos, halved, would create 48 poppers. And there's only 6 halved pieces of bacon (yield: 12 poppers)...

Here's a hint for removing the seeds and membranes from the jalapenos: Use the small end of a melon baller. It works like a charm.

I tried the jalapeno poppers but I used turkey bacon instead and cream cheese. Even my husband ate them and he doesn't like peppers at all.

I added cream cheese, crumbled blue cheese and ranch dressing to the filling (and omitted the cheddar cheese) and took these to a neighborhood "Bacon" party. They were a huge hit and tasted amazing! Thanks for the recipe!
