Mardi Gras is just around the corner and although I will not be able to be there it is the perfect excuse to pull out some of my favourite New Orleans/Cajun/Creole/Southern recipes! Whether if is gumbo or etoffee or something as simple as red beans and rice or a po'boy you really cannot with some New Orleans cooking! Although I am particularly into the seafood and anything with green tomatoes, all of these recipes are bound to impress!

Rocky Mountain Woman: Those fried green tomato BLTs are so good! It would be so nice to have a garden to grow your own in; I have to keep an eye out for when they show up at the grocery store which is not very often.

oh my gosh all those meals look so good...I don't cook cajun a lot but i love the flavors...and I love a reason to have a "party" even if it is just for the family. always fun to celebrate...thanks for all the great recipes!
