41 Recipes for Cinco de Mayo

It is May already and that means that Cinco de Mayo is right around the corner! Once again it kind of snuck up on me this year despite the fact that it is on May 5th every year and it is time to make up for the lost time! Mexican cuisine is one of my favourites so I see Cinco de Mayo as the perfect opportunity to pull out some of my favourite Mexican recipes and to try some new ones! I figured that the best way to kick things off was gather up all of my favourite Mexican recipes and share them with you in this roundup and that was not an easy task! After my first pass through I ended up with a list of over 100 recipes which I thought was way to many to include in a roundup so I trimmed it down a bit to my top 41 recipes which I present to you here.

Kevin, I should have known better than to look at your blog an hour before lunch! I am totally drooling right now and cannot wait to try your bacon guacamole for starters, quickly followed by the fajita burger (perhaps bacon guac ON the fajita burger? My life may have just flashed before my eyes in a good way :). Puts the carnitas recipe I just posted to shame!

Do you know 5 de Mayo was the battle of the mexicans against the french army, that's why it's a holiday but is not as big here in Mexico, our independence and biggest party is in semptember :D I said this because a lot of people thinks is our independence day and is not.
A very traditional dish for semptember is the stuffed chile, it's a chili stuffed with ground beef, raisins, acitron (caramelized fruit) piƱones, sometimes battered with egg, but always wih a sauce made of nuts, cheese, sometimes sour cream, and sprinkle with pomegranate. At the end the dish will have the colors of the flag, green from the chili, white form the sauce and red from the pomegranate :)

According to the wikipedia (http://en.wikipedia.org/wiki/Cinco_de_Mayo) Cinco de Mayo is an US celebration that has its origins in the Mexican-American communities in the American West as a way to commemorate the cause of freedom and democracy during the first years of the American Civil War. It is a great excuse to pull out some tasty Mexican cuisine.

I will have to try that stuffed chili dish on September 16!
