Strawberry Caprese Stuffed Avocados with Pistachio Pesto

Strawberry Caprese Stuffed Avocados with Pistachio Pesto
Strawberries are one of my favourite summer foods, along with tomatoes, and while I am eagerly awaiting the field ripened tomatoes I thought that I would use strawberries as substitutes in my favourite tomato salad, the caprese salad. The caprese salad is a simple salad consisting on ripe tomatoes, fresh mozzarella and basil and it's often accompanied by a splash of balsamic vinegar. For this caprese salad I replaced the tomatoes with strawberries and the basil comes in the form of a basil pesto with creamy pistachios! Instead of just serving the salad like that I like to serve it stuffed in perfectly ripe, cool and creamy avocado halves making for one truly amazing combination of flavours that is just perfect for hot summer days! These strawberry caprese stuffed avocados with pistachio pesto and balsamic reduction are my new favourite summer treat and I'm sure that you will enjoy them just as much as I do!

Bacon Wrapped Asparagus, Asparagus and Pistachio Pesto and Mozzarella Stuffed Chicken

Bacon Wrapped Asparagus, Asparagus and Pistachio Pesto and Mozzarella Stuffed Chicken
Alright, I've got time to share one more tasty recipe that is just perfect for Father's Day and dad is just going to go crazy for this bacon wrapped asparagus, asparagus and pistachio pesto and mozzarella stuffed chicken! Stuffing lean and juicy chicken with things is always fun and for this recipe I stuffed the chicken with asparagus spears, mozzarella and pesto for a full flavour extravaganza! Asparagus just screams summer and it really needs no explanation, I am always in for ooey, gooey, melted cheese and pesto is another ingredient that is amazing with fresh summer basil. I did not use just any pesto for this stuffed chicken, I went with an asparagus and basil pesto and instead of using the more standard pine nuts I went with creamy pistachios! I like to indulge my bacon addiction here by wrapping everything up is bacon but there's a good reason for it here. I'm serious! Wrapping the chicken in bacon helps keep the chicken nice and moist and juicy, because chicken can get dried out when cooked on the grill. Really, it has nothing to do with all of that salty, smokey, crispy, bacon-y goodness! It's to keep the chicken moist and juicy! Anyways, no matter how you look at it, dad is sure to flip over this bacon wrapped asparagus, asparagus and pistachio pesto and mozzarella stuffed chicken this Father's Day, or any day; for dinner, lunch or even breakfast for that matter! Yum!!!

Feature Update: New Recipe Index

The old recipe index was slow and finicky, very often just not working, so I have created a new recipe index page that I hope will give you easier and better access to all of my recipes! I started by adding a recipe search to the top of the recipe index page to make it easier to search for recipes. The recipes are then all categorized in various ways including by dish course, type, cuisine, diet, food group, ingredient, etc. Each index category page shows the photos and the recipes name for each recipe in that category. All of the pages have been made more mobile friendly with larger text to make it easier to tap links etc. I hope that you like the new recipe index page and if you have any suggestions for improvements or notice any issues please let me know!

Creamy Lemon Grilled Chicken, Asparagus and Artichoke Pasta

Creamy Lemon Grilled Chicken, Asparagus and Artichoke Pasta
Today I have a fresh and summery Creamy Lemon Grilled Chicken, Asparagus and Artichoke Pasta! The idea for this pasta came from the flavours of my favourite snack, spinach and artichoke dip, and I was thinking that it would be nice to take a summery twist where the spinach was replaced with asparagus. Things kind of flowed from there, I wanted to use the flavours in a dinner so I went with a pasta and since it's summer I decided to grill the asparagus, because out door cooking is always fun, and since I had the grill on anyways why not grill up some chicken? The dip flavours come from using cream cheese to make the sauce along with plenty of parmesan! To brighten things up I add lemon and parsley making this one really summery dish! This creamy lemon grilled chicken, asparagus and artichoke pasta is just packed with the flavours of spinach and artichoke dip and the summery twist with the asparagus and lemon is simply amazing!

Grilled Asparagus in a Creamy Balsamic Mushroom Sauce

Grilled Asparagus in a Creamy Balsamic Mushroom Sauce
Asparagus and mushrooms are two of my favourite foods and I always enjoy combining the them! This grilled asparagus in a creamy balsamic mushroom sauce is my what I am currently obsessed with and it's a great example of how well the two work together! The recipe is pretty easy with you simply needing to cook the asparagus and make the mushroom sauce to serve on top of it. I like to grill the asparagus during the spring and summer because it's always nice to fire up the grill for some out door cooking and grilling it also adds a nice hint of smokiness to the asparagus that is simply divine! The mushroom sauce is really easy with onions, garlic and thyme in addition to the mushrooms and the sauce is made with a base of broth, a touch of cream and cheese and of course the balsamic vinegar. The cream and cheese make the sauce nice and creamy and a little sweet and the tangy balsamic vinegar is the perfect balance to it! If I am grilling the asparagus out doors it's easy to make the mushroom sauce on the stove the day before so that it just needs to be reheated for the grilled asparagus! I like to serve this grilled asparagus in a creamy balsamic mushroom sauce as a side but you could also call it a salad and its a great addition to any summer meal!

Strawberry Salsa Stuffed Avocados

Strawberry Salsa Stuffed Avocado
Strawberries have to be one of my favourite parts of summer and it's always fun to use them in a semi-savoury strawberry salsa! Whenever I think about strawberry salsa I can't help but think about adding cool and creamy avocados, I mean pretty much everything is better with avocado! Instead of just adding diced avocado to the strawberry salsa I often like to keep things simple and just halve the avocados and 'stuff' them with the strawberry salsa! These strawberry salsa stuffed avocados have to be one of the best summer dishes with dreamy avocados, fresh and juicy strawberries, the tangy lime juice, onions and a touch of heat from the jalapenos! I like to serve these, chilled, as an appetizer on hot summer days and they also work well as a light meal, a salad or even as a dessert!
