I like to finish the salad off with a crunchy toasted nut link almonds and crumbled feta would not be out of place here either! I mean you really can't go wrong with fresh juicy strawberries dipped in a hard dark chocolate shell with the strawberries just bursting in your mouth as you bite into them! Chocolate and strawberries is such a fabulous flavour combination and it gets even better when you increase the chocolate two-fold with the chocolate coating on top of fudge-y chocolate brownies! I like a nice fudge like brownie so I go with a chocolate bar/chip brownie base rather than a cocoa powder base. These chocolate covered strawberry brownies are so super easy to make and so decadently delicious that you will be making them all summer long!

After making and enjoying the teriyaki grilled shrimp so much I knew that I would have to use them in something. It's great eating the shrimp right from a stick but I could not help but think that they would also go well in tacos! Once I have the meat for the tacos decided the next thing that I think about is the salsa and I went with an amazingly tasty teriyaki grilled pineapple salsa with candied jalapenos and bacon! The tacos are filled out with some shredded cabbage and drizzled with a creamy and spicy sriracha mayo and sprinkled with crumbled queso fresco! The combinations of flavours in these teriyaki grilled shrimp and pineapple tacos with candied jalapeno and bacon is absolutely divine!

Fresh and juicy grilled pineapple salsa is so good on hot summer days! (It's nice and refreshing whether you grill the pineapple or skip it and go uncooked!) The other day I was enjoying some fabulous grilled pineapple salsa and I could not help but think that it would be really nice with a sweet and salty teriyaki sauce! Then I was thinking that instead of using fresh jalapenos I could use candied jalapenos, which I had recently discovered and become instantly obsessed with! Of course I could not stop there and bacon just had to make an appearance since it goes so well with all of the other ingredients! The resulting teriyaki grilled pineapple salsa with candied jalapenos and bacon is my new favourite summer salsa with all of the flavours and textures working so well together!

Summer is the perfect time to enjoy a nice fresh caprese salad! A caprese salad is a salad with fresh tomatoes, mozzarella and basil and every time I have one I can't help but think that cheese is always better when melted so why not enjoy it and a hot melted caprese dip? This dip is quite literally a caprese salad with tomatoes, mozzarella and basil pesto that is baked until the cheese is all melted and ooey and gooey and oh so good! Enjoy this hot melted caprese dip as a snack or even as a light summer meal with toasted baguette, crackers, chips or veggies for dipping and I'm certainly not going to tell anyone if you skip all of that and just eat it by spoonful like I do!

It time for some more outdoor grilling fun with these bacon wrapped guacamole stuffed burgers! Bacon and avocados are two of my favourite foods and when you combine them in the form of burgers and grill them up until crispy, smoky, charred, juicy and oh so good, they are nearly irresistible! These burgers could not be easier to make! You just season the meat as desired, form it into thin patties, top with guacamole followed by another patty and the patties are pinched closed on the sides to contain the guacamole and prevent it from bursting out. Everything is then wrapped in bacon, both to help restrain the guacamole and to help keep the burgers nice and juicy when grilled... who am I kidding? The bacon is simply there because it's, well it's bacon!! I like to serve these bacon wrapped guacamole stuffed burgers in a toasted bun with melted cheese and some fresh homemade pico de gallo!

Today I have some more grilled meat on a stick for you and this time it's a tasty grilled teriyaki shrimp and pineapple skewers! This grilled shrimp could not be easier to make! You simply marinate the shrimp in a quick, easy and tasty homemade pineapple teriyaki sauce, skewer it up along with some pineapple slices and grill it to perfection! I enjoy eating these teriyaki shrimp skewers right off of the stick as finger food but it's also great used in everything from salads, to tacos, sandwiches, etc. No matter how you plan on enjoying this grilled teriyaki shrimp and pineapple it's sure to be a hit!

I have really been enjoying salads for dinner lately and I am currently absolutely crushing on this blackberry balsamic grilled chicken salad with crispy fried goat cheese! This salads base is fresh blackberries starting out with a blackberry balsamic vinaigrette that is used both to marinate the chicken and as the dressing for the salad! The salad is filled out with lettuce, avocado, nuts, onions and goat cheese along with the grilled chicken and of course plenty of fresh blackberries. Instead of simply sprinkling some crumbled goat cheese onto the salad, which would be OK, it is formed into patties, coated in breadcrumbs and fried until nice and golden brown and crispy on the outside and warm and melty on the inside! This blackberry balsamic grilled chicken salad with crispy fried goat cheese is one tasty and fresh summer meal!

As it turns out, the star of this show is the crispy fried goat cheese! You really, really should try this amazing salad, but if you don't you absolutely need to try the crispy fried goat cheese! I practically inhale, usually long before it gets to the salad!

Meat seems to get a lot of the spotlight with all of the summer grilling but lets not forget about the veggies as they are also great when grilled! The smokiness and caramelization from grilling really brings out the flavours veggies making them so much better! It's easy to just throw some veggies on the grill but you can also jazz them up with some flavours and skewering them up makes them nice and portable finger food! Mushrooms are one of my favourite food and they just happen to be absolutely amazing when grilled! On hot summer days I often don't feel like doing a lot of cooking or eating a heavy meal so I find myself making salads for dinner fairly frequently. You really just need to take any salad and add some meat to change it from a side to a meal but I like to keep things interesting with themed salads like this Hawaiian themed Sriracha Honey Lime Grilled Chicken and Pineapple Salad. This salad starts out with a pineapple based marinade with soy sauce, sriracha, lime, honey, garlic and ginger. The chicken is marinated the sauce and then grilled, since it's nice and warm outside anyways, before being sliced and tossed in the salad. Since we have the grill out I like to throw some pineapple and pepper slices on it for the salad as well. The salad is rounded out with tomatoes and avocado slices along with some chopped macadamia nuts. Today I have a tasty summery asparagus and artichoke breakfast casserole recipe for you! This recipe was inspired by spinach and artichoke dip which is one of my favourites and I could hardly resist turning it into a breakfast! Who wouldn't want spinach and artichoke dip for breakfast? Because it's summer and there is plenty of asparagus around I started out by replacing the spinach with asparagus! The base of this casserole is eggs along with cottage cheese, though ricotta would also be good! The dips remaining flavours of artichokes and cream cheese are added using nice big chucks of the cream cheese so you really notice it and everything is rounded off with some parmesan cheese which adds a ton of flavour! The egg casserole takes almost no time to make so it's just as perfect for weekday breakfasts as it is for weekend brunches! Make a double batch of this asparagus and artichoke breakfast casserole on the weekend and enjoy the leftovers for quick weekday breakfasts with just a few seconds in the microwave to warm it them up!

Shrimp scampi, which is basically shrimp cooked in a butter, garlic and lemon sauce, is one of my favourite meals! The other day I was enjoying some cilantro lime grilled shrimp and I could not help but think that the fabulous cilantro and lime flavour combo would be great in shrimp scampi! I mean if you take something that is already good, like butter and garlic, and combine it with something else that is great, like cilantro and lime, you can only get something even better! I was right! The buttery, garlicky, cilantro and lime sauce is absolutely amazing with shrimp; and it's so quick and easy to make! You can serve this cilantro lime shrimp scampi all by itself, with crusty bread, on rice, on pasta, on quinoa, etc. or my current obsession, zucchini noodles to make for a complete, light summer meal!

Candied Jalapenos

I am a fan of spicy hot chili peppers and I always have a jar of pickled jalapeno peppers in my fridge so when I heard about candied jalapenos I just had to try making them! Candied jalapenos are pretty much just pickled jalapenos that are sweetened with sugar. Whoa! Spicy and tangy jalapenos that are also sweet? Yum! Candied jalapenos are nice and easy to make; you just need to slice up a bunch of jalapeno chili peppers and simmer them in a combination of vinegar and sugar which adds the tanginess from the vinegar and the sweetness from the sugar to the jalapenos. That's it! With just a few minutes of effort you have a nice sized batch of candied jalapenos and I can really see why they are called candied jalapenos because they are so good that I just devour them, like popping candy! These candied jalapenos can of course be used in things like sandwiches, salads, on pizzas, etc. in addition to just eating them straight out of the jar!

This weekend is a summer holiday long weekend and a great time for enjoying some sunny out door weather along with plenty of tasty food like these bacon bbq chicken skewers! Grilled meat on a stick is one of the best things about summer and why not add some bacon to the mix? I mean, bacon makes everything better, right? For this grilled chicken I went with a simple homemade BBQ sauce with, you guessed it, bacon! There are also some caramelized onions and maple syrup for sweetness, cider vinegar for tang, soy sauce for saltiness and chipotle chili powder for a smokey heat. The sauce is processed in a food processor to break up the bacon and it's best to let the sauce hang out in the fridge over night to let the bacon flavours infiltrate the sauce! Next up you simply marinate the meat in the bacon bbq sauce, skewer it and grill it up until slightly charred and good! Summer long weekends are always fun and you can make them even better with these bacon bbq chicken skewers!
