These strawberry bruschetta with bacon, candied pecans and goat cheese with a balsamic drizzle combine some of my favourite flavours and they are perfect for summer entertaining! Normally I would use these ingredients in a salad but they also work well in bruschetta form as finger food when entertaining. The juicy strawberries pair perfectly with the creamy goat cheese, the salty bacon and the tart balsamic vinegar and I like to top everything off with a touch of fresh basil to brighten things up! The candied pecans add a nice sweet crunch, though you could easily substitute regular pecans.

It's time for another salad recipe and this time it's a strawberry and avocado salad with strawberry poppy seed vinaigrette! Strawberries work so well in salads and I find myself making them on a near weekly basis all summer long! This salad combines so many of my favourite ingredients from the strawberries to the avocados, the BACON, and feta and the dressing is just so tasty and summery fresh! The strawberry poppy seed vinaigrette uses fresh strawberries with white balsamic vinegar, honey, tamari, mustard, garlic and a touch of sriracha for some spicy heat and it is just perfect on this strawberry salad!

One of my favourite things about summer is all of the fresh strawberries; I love using them in salads and they also work well in dressings like this strawberry poppy seed vinaigrette! This dressing is so easy to make that it literally only takes about 5 minutes! You simply puree fresh strawberries with white balsamic vinegar, oil, garlic, honey for sweetness, mustard for tanginess, tamari for saltiness and a kick of umami and sriracha for heat along with the poppy seeds of course! This fresh strawberry poppy seed vinaigrette goes great on salads of all kinds and in particular, this strawberry and avocado salad with bacon and feta!

Last week we finally saw some spring weather with a few days where it was warm enough to cast off our jackets and that got thinking about spring recipes including these strawberry pancakes. These pancakes have it all from the large chunks of strawberries to ricotta to keep them nice and moist, lemon to keep them nice and bright and fresh and even some poppy seeds to boot! Honey is used as the sweetener rather than sugar and it pairs fabulously well with the lemon and strawberries! I could easily eat a stack of these pancakes plain but I like to top them with a fresh homemade simple strawberry syrup, which is a must make all by itself! Of course some fresh sliced juicy strawberries sprinkled on top finish these strawberry lemon ricotta poppy seed pancakes making them just perfect for a special spring breakfast brunch or dinner!

This weekend is Mother's Day and over the next few days I will be trying out some new recipes for breakfast in bed for mom or a special brunch and up first is this sweet and savoury strawberry strata! (A strata is essentially a bread pudding where bread is soaked in a custard filling of milk and eggs and baked until it sets.) For this strata I was going for aspects of both sweet and savoury by combining strawberries with bacon and goat cheese. I start the recipe off with a loaf of King's Hawaiian Sweet Bread which is perfect as it's sweetness complements the strawberries! This recipe is super easy to make; once you have everything mixed up you simply need to bake it; anyone can make it for mom! The strata is finished off by topping it with fresh sliced strawberries and a balsamic syrup made by reducing balsamic vinegar and sugar until it thickens and it's sweetness and tartness perfectly complements the sweet and savoury strata.

Although it is still cold here, Spring has officially arrived and what better way to celebrate than with strawberries! California strawberries are available year round but during Spring they are at their peak season and I thought that I would welcome in Spring with a fresh strawberry pie!

I started the pie off with a simple shortbread crust filled with lemon zest and poppy seeds and I filled it with a quick and easy lemon ricotta no-bake cheesecake sweetened with honey. The pie is finished off with a floral like arrangement of fresh sliced strawberries along with a garnish of mint and lemon zest.

Right now the markets are filled with fresh strawberries and raspberries and that made me think about one my favourite ways to enjoy them together, in this strawberry and avocado spinach salad with raspberry balsamic vinaigrette. You might think that it is a bit odd combining strawberries in the salad and raspberries in the dressing but they work beautifully well together especially in a baby spinach salad with cool and creamy avocado, salty bacon and tangy blue cheese! Individually all of the ingredients in this salad are pretty amazing but combined they take things to a whole new level! This strawberry and avocado spinach salad in raspberry balsamic vinaigrette is so easy to throw together and it makes for a tasty treat of a light meal on hot summer days!

A nice fresh strawberry caprese salad is a great way to enjoy some of those perfectly ripe and juicy summer strawberries but if you are looking for something that could be more of a light meal how about a strawberry quinoa and spinach caprese salad? This salad is pretty much just a simply amazing strawberry caprese salad served on a bed of baby spinach and light, fluffy and tender quinoa and it makes for a really quick and easy light meal! When doing a strawberry caprese salad like this I like to kick up the flavour a bit by using a tasty homemade balsamic vinaigrette rather than just a splash of balsamic vinegar.

Out of all of the great ways that there are to enjoy strawberries sometimes the simplest ones are the best! Field ripened strawberries certainly don't need anything added to be ridiculously good, certainly not any sugar, but a splash of balsamic vinegar can help brighten them up and coax out even more of their natural flavours. There is only a small step between balsamic strawberries and a caprese style salad with the addition of fresh mozzarella and basil and this salad is truly one of summers finest treats!

Are you ready for some more quesadillas with summer fruit or berries? How about some strawberry quesadillas? Strawberries are in season right now and it's been hard not to think about different ways of enjoying them since I have been picking up four or more pints of them every week! Quesadillas definitely came to mind, I mean you cannot go wrong combining fruit or berries with plenty of melted cheese, and I wanted to make a light meal out of them by adding some grilled chicken. I also included some of my favourite strawberry flavour combinations including smoky and salty bacon, sweet onions, tart balsamic vinegar, spicy sriracha chili sauce and fresh cilantro giving it a nice exotic flare! I have to say that these flavours work very well together making these quesadillas one fabulous way to enjoy some of summers bounty!

With summer here it is time to start looking for ways to keep cool on the steadily hotter days and what better way to do so than with a cool and refreshing glass of lemonade? Instead of running out to the store to get some, how about making your own? Trust me, it's dead easy; it's simply lemons, sugar and water along with about five minutes of effort and the results are so much better than 'from concentrate'! Bored with plain old lemonade? Try adding something to it like one of the many ripe, in season summer fruits or berries like strawberries! As exciting as a fruity lemonade is how about making it even more interesting by adding a fresh herb like basil or mint? This strawberry and basil lemonade is so easy to make from scratch at home and it is sure to keep you cool, hydrated and refreshed on the hot summer days to come!

Summer is going to be so good!

With the local strawberries in season I have been getting a lot of them every week and it was about time that I used them in a recipe rather than just snacking on them. I have been thinking about a strawberry coffee cake ever since I saw one on Averie Cooks and it was about time that I made one! I went with a pretty basic coffeecake recipe that relies on butter, sour cream and buttermilk to ensure that it is nice and moist and tender both right out of the oven and that it remains that way for a few days. This strawberries and cream coffeecake recipe could not be easier to make; you really just need to mix the dry ingredients, mix the wet ingredients, combine them, pour them into a baking pan and then bake. With less than 10 minutes of work you can have this coffeecake in the oven and be impatiently waiting for it to bake while your house fills up with the irresistible aromas of baking strawberries and vanilla! What a great way to enjoy fresh summer strawberries for breakfast!

After making the strawberry BBQ chicken club sandwiches with bacon, avocado and goat cheese I still had plenty of the roasted strawberry BBQ sauce leftover and I knew just what I wanted to make with it, a strawberry BBQ quinoa salad. I have been wanting to try making a BBQ chicken quinoa salad with black beans and corn for a while now but a strawberry BBQ quinoa salad suddenly sounded like a much better idea! I used a lot of the same flavours as in the strawberry BBQ chicken sandwich in this quinoa salad including the avocado, bacon and goat cheese since they worked so amazingly well together. I filled the quinoa salad out with baby spinach along with some green onions and cilantro. If you have the cooked chicken on hand, this salad is as easy to make as cooking the quinoa and throwing everything together and despite that it is so fantastically good!

Armed with my shiny new roasted strawberry BBQ sauce I was ready to use it on something grilled! Before I had even made the strawberry BBQ sauce I was already thinking about using it in a grilled chicken club sandwich with lettuce, tomato and bacon in addition to the grilled chicken and the BBQ sauce. Even though the sandwich would be great just like that I really could not resist kicking it up a bit! I find that a creamy and tangy goat cheese tends to go really well with fruity sweet and spicy sauces like this strawberry BBQ sauce so I had to include some and a chicken club sandwich always benefits from some cool and creamy avocado! The flavours in this grilled chicken sandwich meld together magically and you will definitely be licking you fingers clean after eating one! With grilling season about to begin these strawberry BBQ chicken club sandwiches are a great way to kick things off this upcoming long weekend!

Grilling season is quickly approaching and I am getting ready by making some homemade BBQ sauces starting with this seasonal strawberry BBQ sauce. This strawberry BBQ sauce was inspired by the flavours in my strawberry and balsamic grilled chicken salad and my balsamic strawberry and chicken pizza with sweet onions and smoked bacon which predominantly feature the strawberry and balsamic vinegar flavours along with some Asian influences. I really wanted to be able to taste the strawberries in this BBQ sauce so that meant starting with a lot of strawberries and roasting them to concentrate their flavour. I like a BBQ sauce with a nice sweet side so for the sweetener I went with a combo of maple syrup and some homemade strawberry jam to add even more strawberry flavour. Up next was the balsamic vinegar for some tartness, soy sauce for the saltiness and a smoky and spicy chipotle chili in adobo. Continuing with the Asian influence I added plenty of garlic and ginger along with some BBQ sauce staples with a fresh cilantro finish. I have to say that this roasted strawberry BBQ sauce is addictively good! The strawberry flavours shine through and it has a really nice balance of sweet, spicy, tart and salty and lets not forget those sultry smoky undertones.

For my next batch I plan on adding bacon since both the salad and the pizza that inspired this dressing include bacon!

When I made the strawberry shortcakes earlier in the week I made sure to make a double batch of the shortcake so that I would have some leftovers to use in something else. I came across the idea for roasted strawberry shortcakes on Spoon Fork Bacon not too long ago and I really liked the sound of using the classic flavours of strawberry shortcake in a cool and refreshing drink that would be perfect on a hot summer day. This drink starts out with your basic milkshake ingredients including the milk and the ice cream and then it moves on to add some strawberries and actual shortcake! Yep, you heard me right, big chunks of shortcake are added to the shake and then it is pureed in the food processor leaving tiny bits of cake in your shake! The next part that really makes this treat is that the strawberries are roasted first to concentrate and bring out all of their flavour just packing the shake with strawberry goodness! Right now I am going to enjoy this really cool shake but up next, I think it is going to have to be roasted strawberry shortcake ice cream!

The strawberries at the grocery stores are starting to dwindle and the farmers market is starting to fill up with other local, in season berries and fruits but I still want to get a few more strawberry recipes in. I really could not let strawberry season pass me by without making strawberry shortcake at least once, I mean it is pretty much the quintessential strawberry dish and it just just screams happy summer days! Luckily strawberry shortcake is super easy to make even if you are making the shortcake from scratch! It is just as easy as mixing the five ingredients in the shortcake dough, forming it into your favourite shapes, baking it for 15 minutes and topping it with whipped cream and sliced fresh, ripe strawberries. All said and done and you could be enjoying a strawberry induced bliss on pillowy clouds of light and fluffy shortcake in less than 30 minutes!

We are right in the middle of strawberry season here and it was about time that I did something with them other than simply snacking on them by the handful. For my first strawberry recipe I wanted to try something a little different in the form of a savoury strawberry pizza! I first came across the recipe for this strawberry pizza on The Cafe Sucre Farine last year and I had been saving it to make during the local strawberry season. This strawberry pizza is very alluring with its beautiful combination of flavour and balance of sweet, salty, tangy and spicy elements!

Two weeks ago I had the opportunity to attend a fun filled couple of days in Monterey California for a summit put on by Dole where we learned more about where our salads come from and how they make to our tables. While we were there we got to eat some tasty food including a lot of salads which got me thinking about salads. As luck would have it May is also the National Salad Month so it was about time that I got down to making some salads!

I always enjoy making my own salad dressings! Not only is it easy to do but you have complete control over what goes into them and how much to make. If you feel like having a different dressing every night of the week you can make a small batch and if you want the same one all week you can make a large batch. One of my favourite dressings to make at home is the balsamic vinaigrette which is so easy to make and always better than store bought. The other day I was thinking about a strawberry salad with a balsamic vinaigrette and an idea hit; I could get even more strawberries into the salad by adding them right to the dressing and to get every last drop of flavour from the strawberries, I could roast them first! Although this dressing takes a bit longer to make with roasting the strawberries, it is still really simple and it is so worth it! Strawberries and balsamic vinegar are great together and even better when combined in this roast strawberry balsamic vinaigrette! Next up is the salad that I used it on.
