Fava Bean Pesto on Fettucini

When I was at the market on the weekend I saw some fava beans and I remembered seeing an interesting recipe for a fava bean pesto. I thought the combination of fava beans, mint, pecorino and lemon sounded interesting. I was hoping to do this with tagliatelle pasta but I could not find any and ended up using fettuccine. It was pretty good. The mint added a really nice "coolness". I would say that this would probably also be good on crostini.

Fava Bean Pesto on Fettucini

  • 1 cup fava beans (removed from the pods and blanched)
  • 2 tablespoons mint
  • 1 clove garlic (chopped)
  • 1/4 cup pecorino cheese (grated) - you can substitute parmigiano reggiano if you wish
  • 3 tablespoons olive oil
  • lemon juice to taste (optional)
  • salt to taste
  1. Place everything into a food processor and blend.
  2. Serve on cooked pasta or gluten free pasta and enjoy!

What a pretty dish! I don't think I've ever had fava beans... reminds me of "Silence of the Lambs" - with some fava beans and a nice Chianti. :)~

The fava beans were fresh. I got them at the farmers market at the St Lawrence market. That place it great in the summer. So many fresh fruits and vegetables. I go every Saturday.

I do miss St Lawrence Market. The farmer's market here in Halifax has some great fresh stuff, BUT...

it's a) more of a social gathering place than a market and gets crowded by 9am
b) not as much variety -only 1 or two butchers and fishmongers (although these sell their own very fresh from the ocean fish & shellfish)

As for the fava bean pesto..I will definitely give it a try. Thanks for sharing with Presto Pasta Nights and check back for the roundup tomorrow.

OMG this looks seriously fabulous! I haven't ever cooked with Fava beans before but I saw them in the grocery store the other day and was wondering what to do. Pasta pasta pasta!

I like lime and I cannot imagine that it would be bad. It sounds interesting, I might try it next time.

Wow! This sounds fantastic!! I know that I'm a bit late for the party but after having tried a dish of pasta with fava bean pesto, I knew that I had to try it home. There's another recipe (italian) that I'm eyeing right now so I think this will be great to see if there are any taste differences!
