Coleslaw

When I think about salads, cabbage is not the first thing that comes to mind but it can be used to make some good salads. Coleslaw is perhaps the most common cabbage based salad. There are many recipes for coleslaw but at its base it seems to be shredded cabbage, carrots, mayonnaise, white wine vinegar and sugar. Coleslaw is also a common side served with fish and chips so I included it in my fish and chips dinner. I made a few substitutions and additions to my coleslaw. Since I was already using dill in the meal and I had some left over I decided to add some to the cole slaw. This creamy dilled coleslaw was good and it went well with the fish and chips dinner.

Coleslaw
ingredients
- 2 cups cabbage (shredded)
- 1 carrot (shredded)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon sugar
- 1 lemon (juice)
- salt and pepper to taste
- 1 handful parsley (chopped)
directions
- Mix the cabbage and carrot in a large bowl.
- Mix the mayo, sour cream, sugar, lemon juice, salt and pepper in a bowl.
- Mix everything together.

This looks like lovely chunky coleslaw! I lke adding dill to mine too and to potato salad, it is such a flavoursome herb!
I like how it isn't drowned with dressing like most cole slaw. This is gorgeous
Cole slaw is one of my favorite side dishes. I like the chunky texture of your variation.
The chili sauce is not optional in my kitchen and dill is a favored herb of mine. I don't eat fish, but I'd be sure to enjoy this creative cole slaw. I am impressed by your creativity, as usual.
Thanks for coming by my new blog! I've been reading yours for awhile now. :) The coleslaw looks delicious!
I like eating coleslaw with fish in crumbs (breadcrumbs, parsley, garlic mince, salt and pepper--a pinch of paprika will do too!). Red cabbage can give more colour on coleslaw if you like them. I am mad on salad, at any types! Looks great, Kevin!
I love creamy cole slaw's, and really like your use of chili sauce here. Ever since trying a fish taco topped with a creamy cole slaw, I've become hooked on paring all sort of fish with it. Another great recipe from Kevin!
So I read your last post, then went out and got me some Guinness (which I don't usually drink) and then thought to myself, 'but where's the slaw?'.
Timely post Kevin :)
good cole slaw is essential to a barbecue. in fact, i won't eat a pulled pork sandwich without it.
The addition of dill makes sense - especially with the fish meal! Sounds yummy!
The simplicity of this dish makes it so beautiful.
your home made cole slaw looks so delicious n wholesome!
I never really made Cole Slaw, it doesn't look and sound appetizing to me. Then, you post the recipe, and I thought... hmmm.... maybe it's not that bad! I probably have to try to make it one day!
I've never thought of adding honey to coleslaw! A great idea - yours looks extra yummy.
I love coleslaw, and love the texture of yours!
Kevin - I've given you an award, please see my blog!

I love coleslaw that isn't dripping in mayonaise!
MMmm, I have always wanted to make cole slaw. I wish I had a large bowl of yours right about now!
I've never been able to nail down cole slaw, but this one looks quite tasty.
That Cole Slaw looks perfect, I can imagine how awesome your Fish and Chips dinner was!
mustard??
how much?
it's not in the list of ingredients..
thanks!
Champagne/StitchPoet: Sorry about that, I keep going back and forth on how I wanted to add a bit of bite/heat to the cole slaw with the mustard and the chili sauce. I have cleaned up the recipe.
consider KFC style and add their secret Tarragon Vinegar.
