The other day I noticed a sale on trout which reminded me that it has been a long time since I last made a fish dish and it was the perfect excuse to do so. Fish amandine, or in this case trout amandine, is a super quick and easy dish where the fish is fried and then served in a browned butter, lemon and almond sauce and it can be made with any number of different fish fillets. Essentially after frying the fish all that needs to be done is to brown the butter in the pan, add the almonds and toast in the butter until lightly golden brown and then hit the sauce with some lemon juice before serving over the fish. This dish is definitely easy enough to tackle on a weeknight and it is also sure to impress at a dinner party.

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 2

Trout served in a butter, lemon and almond sauce that is quick and easy for a weeknight meal and sure to impress at dinner parties!

  • 2 tablespoons butter
  • 2 (6 ounce) fish fillets such as trout, sole, haddock, etc.
  • salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons lemon juice (~1/2 lemon)
  • 1/4 cup almond slices or slivers, toasted
  • 1 tablespoon parsley
  • salt and pepper to taste
  1. Heat the butter in a pan over medium heat until it is bubbling, add the fish, cook until cooked, about 2-3 minutes per side, and set aside.
  2. Add the butter to the pan and cook until it browns, about 2-3 minutes.
  3. Add the almonds and cook until lightly toasted, about 2-3 minutes.
  4. Add the lemon juice and parsley, season with salt and pepper and remove from heat.
  5. Serve the fish covered in the sauce.

Option: For One-Pan: Make this a one-pan meal by sautéing some veggies like asparagus or green beans and setting aside before adding the fish.
Tip: Season the fish with a touch of creole/cajun seasoning for something a little different.

I use Amaretto instead of lemon juice, burning the alcohol off. Pretty tasty!!!!

I tried it too & it came out great. I made few changes to the recipe. I broiled the trout for 15 min instead of frying it in butter. While making the sauce, I sauteed some chopped garlic for additional flavor.
