Summer is just full of amazing fresh produce and it's great to take advantage of it all by preserving it in various ways so that you can enjoy using it for the rest of the year. Some nice ways to preserve fresh produce is by freezing it, canning it, making pickles and making jams or jellies. I always enjoy a nice homemade jam and this jalapeno jelly jelly is a favourite! I mean you really can't really go wrong with a sweet and spicy jalapeno jam with a hint of sour and saltiness, especially for breakfast on toast! Yum! I like to use this hot pepper jelly on bagels with cream cheese, on pancakes and in sandwiches, not to mention by the spoonful, and I always like to have some on hand in my pantry or in the fridge!

Crispy Tortilla Skillet Pizza

Crispy Tortilla Skillet Pizza
Pizza is one of my favourite foods and this crispy tortilla skillet pizza has to be one of the quickest and easiest ways of enjoying pizza! Normally to make pizza you start off by making a pizza dough which you need to make, knead, let rise and then bake, all of which takes time so using an already made tortilla is quicker and easier! Using the tortilla for the crust gives you a really nice and thin crust and the only thing that you really need to worry about is getting that tortilla crispy, so that you can pick up the slices of pizza. I have experimented a lot with trying to get the tortilla crispy and the best way that I have found is to start off by heating a cast iron skillet until it is very hot and placing the tortilla into the skillet just before topping with the sauce and cheese and placing under a broiler to melt the cheese. Starting out with a hot cast iron skillet ensures that the tortilla gets crispy, without burning, while the cheese melts on top under the broiler! Of course you can top these crispy tortilla skillet pizzas with your favourite pizza toppings!

Dad loves cheesecake so why not surprise him with a savoury take on cheesecake for dinner this Father's Day? Jalapeno poppers are one of my favourite foods and they consist of jalapeno peppers stuffed with cream cheese and cheddar cheese that are coated in breadcrumbs and fried until crispy! Since the poppers are already filled with cream cheese and cheesecakes primary ingredient is cream cheese it only seemed natural to combine the two to make a jalapeno popper cheesecake! But would a savoury cheesecake work? A cheesecake classically has a simple crumb crust and for this one I went with crumbled cheese crackers to start things off nice and cheesy! Next up was the cheesecake batter which is pretty normal with cream cheese, eggs and sour cream along with the cheddar cheese and jalapenos! I wanted this cheesecake to be a nice and satisfying meal so I decided to add some chorizo sausage to the mix! Once the crust and batter are ready you simply bake it like a normal cheesecake and then enjoy it warm from the oven or chilled from the fridge! If your dad loves cheesecakes and poppers then he'll love this jalapeno popper chorizo cheesecake!

Father's Day is this weekend and it's always nice to start dads day off right with a nice hearty breakfast and these slow cooker breakfast baked potatoes are perfect. Baked potatoes are always satisfying and why not for breakfast? These baked potatoes are made easy by cooking them in the slow cooker overnight so that they are ready for breakfast and you just need to prepare the toppings when you get up in the morning. Of course I like to start off with the breakfast classics of bacon and eggs to which I add cheese, which melts into the freshly baked potatoes, along with cool and creamy avocado. No matter how you top these slow cooker breakfast baked potatoes dad is sure to enjoy them this Fathers Day!

Chicken alfredo pasta is so nice and easy to make at home and it's even better with the addition of broccoli and bacon! Chicken alfredo is a classic dish where pasta and chicken is served in a creamy alfredo sauce which traditionally consists of butter and parmesan cheese and these days often contains cream. This broccoli and bacon chicken alfredo pasta is as easy to make as cooking the pasta, pan frying the bacon followed by the chicken before making the sauce with butter, parmesan, garlic, cream and plenty of fresh cracked pepper and tossing it with the pasta, chicken, bacon and broccoli! All said and done this meal takes about 30 minutes so it's perfect for a rushed night and it's also impressive enough to serve to guests!

I often find myself thinking that I should enjoy seafood more so I thought that I would share my current favourite fish dish, this lemon pepper parmesan roast trout. This is a super quick and easy one-pan roast fish dish where the whole meal is roasted on a pan at the same time. The fish, I like trout, salmon or even tilapia, is seasoned with lemon, fresh cracked pepper and dill before being topped with parmesan and roasted until the fish is melt in your mouth tender and the cheese has melted; yum! Asparagus and tomatoes are also roasted on the pan completing the meal and everything is served with a hit of fresh lemon juice which makes things bright and fresh! The lemon, pepper and dill combo is absolutely fabulous in this lemon pepper parmesan roast trout and it's the perfect light and quick meal anytime!

Quick and easy, grab on the go breakfasts are sometimes common these days but it's always nice to take some time, not a lot, and enjoy a nice home cooked breakfast every once in a while, like these blueberry banana oatmeal pancakes! Pancakes are one of my all time favourite, nostalgic, breakfasts as they bring me right back to homemade pancake breakfasts cooked fresh by mom! Of course pancakes aren't only for breakfast, they also make great brunches, lunches and my all time favourite treat, pancakes for dinner! Pancakes are a perfect base to add flavour and a great classic is blueberries! I am really into the blueberry and banana combo, especially with oatmeal and yogurt, so it seems only natural that blueberry oatmeal banana pancakes would be oh so good and topping them with yogurt instead of syrup would just take them over the edge of amazing! These blueberry banana oatmeal pancakes with honey lemon yogurt are perfect for any occasion from busy workday breakfasts, to special weekend brunches and even for dinner!
