I would substitute dijon for Bavarian sweet mustard or coarse-ground mustard, remove the cinnamon, and NOT mix the bacon in with the apples. I know the original recipe has it sprinkled on top but I thought it would be easier to eat mixed in. Unfortunately the bacon overwhelms the flavor of the apples. Great way to use up dry baking apples though; thanks for breakfast, Kevin.
