I loved this. Definitely going into my rotation whenever I do Mexican, which I do often. The only thing I changed was I deleted the beans. Don't like them. I know. How can you not like beans? I substituted lots of button mushrooms. However, the star of this salad was the dressing. So good. I have a sweet tooth so I added a teensy bit more sugar, but that was it! And I have to say the calories on this were not bad at all. Of course, I didn't have beans in my salad. Regardless. Beans, shmeans, this salad was wonderful. Try it. You'll love it.
