Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

Just made this. Here are my modifications:
- Used plain Greek yogurt.
- Used lime juice, with a splash of lemon juice.
- Used red onions.
- Used dried parsley and dried basil.

Currently eating a little of this with mixed salad greens. It tastes really good. Definitely a keeper.

Thank you for sharing.

Kevin,
Thank you so much for your incredibly creative recipes. I am working to get Type 2 Diabetes into complete remission and find all sorts of alternatives I can use to make your recipes part of a delicious meal plan. I’m about to buy a tortilla press, so guess what I’ll be making as soon as it arrives :-))
Yours in Gratitude
