Bacon Guacamole Grilled Cheese Sandwich

A buttery and toasty grilled cheese sandwich stuffed with cool and creamy guacamole, crispy bacon and melted jack and cheddar cheese. The crunchy crumbled tortilla chips in this grilled cheese pay tribute to the classic combination of tortilla chips and guacamole dip.

A guacamole grilled cheese sandwich has been on my to try list for a while now and since I was making the bacon guacamole on the weekend I figured I would just pick up double the ingredients and make both. The basic idea behind this grilled cheese is quite simple and it started out with just adding guacamole to a grilled cheese but with the success of combining salty bacon-y magnificence with cool and creamy guacamole I could not resist adding a few slices of bacon to the sandwich. I also had some leftover corn tortilla chips from dipping on the weekend so I decided to crumble a few of them and add them to the sandwich for texture.

Like all grilled cheese sandwiches this one is pretty easy to make though you want to try to remember to pull the guacamole out of the fridge early so that it can come up to room temperature before adding it to the sandwich. Having all of the ingredients of the sandwich at room temperature is going to help ensure that the cheese melts into ooey gooey goodness so pull the cheese and butter out of the fridge at the same time as the guacamole. The only real problem with this guacamole grilled cheese sandwich is that it can be a bit messy to eat but I was not really thinking about that as I wolfed mine down. This sandwich is certainly one amazing way to enjoy any leftover guacamole and it is even worth making a fresh batch of guacamole just to make some grilled cheese!

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 1

A buttery and toasty grilled cheese sandwich stuffed with cool and creamy guacamole, crispy bacon and melted jack and cheddar cheese. Crunchy crumbled tortilla chips in this grilled cheese pay tribute to the classic combination of tortilla chips and guacamole dip.

ingredients
  • 1 tablespoon salted butter, room temperature
  • 2 slices sour dough bread (gluten-free for gluten-free)
  • 1/2 cup cheddar cheese, shredded (or 2 slices), room temperature
  • 2 tablespoons guacamole, room temperature
  • 2 slices bacon, cooked and crumbled (optional)
  • 1 tablespoon tortilla chips, crumbled (optional)
directions
  1. Butter one side of each slice of bread, sprinkle half of the cheese onto the unbuttered side of one slice of bread followed by the guacamole, bacon, tortilla chips, the remaining cheese and finally top with the remaining slice of bread with the buttered side up.
  2. Grill in a pan, preheated over medium heat, until golden brown on both sides and the cheese has melted, about 2-4 minutes per side.

    I saw this recipe on Pinterest and decided to give it a try yesterday but I added and subtracted a couple of ingredients. I used 3 strips of bacon, added thin sliced fresh tomatoes and used pepper jack cheese. Made 6 of the sandwiches and there wasn't a crumb left!! Fantastic fast lunch or supper idea. Thanks!

    I made this tonight and it was incredible! The flavor combo was perfect. I used pita chips instead of tortilla chips, but I wouldn't recommend leaving out chips altogether. This perfect sandwich demands that extra crunch. I will definitely make this again.

    i loved it!so yummy!!!my husband was moaning the whole time he was eating it!you made me very popular today!i had to use mature cheddar with classic cheddar because we don't have jack cheese in greece and i had no tortilla chips so i crumbled a taco shell instead.thank you for the amazing dinner!!

    CMC: I am not a dietician or a nutritionalist and I used an automated tool to get the low carb label for this recipe. When I checked it with another online tool I do get that only (approximately) 20% of the calories from this sandwich come from the carbs which meets the requirements of a low carb diet.

      I think low carb is better measured by total carbs, not percentage, since most keto diets use that measure. To be really”low carb” you would use low carb bread and leave off the chips. For a special list of specifically low carb recipes, you should probably include carb count in the nutrition information.

    While this may be lower carb as compared to some foods, it is not "low carb" by the standards of most people on a low carb eating plan.
    Helpful hint – bread, especially white bread (as shown in many of your pics on the initial "low carb" recipes page (?) does not belong anywhere on a low carb menu.
    Here is why I care: those of us on genuine low carb eating plans for health and weight loss purposes are constantly on the search for variety in our meal planning. This search led me here, and to some disappointment. This is not a collection of low carb menu ideas so much as a collection of very delicious looking recipes.
    Perhaps before advertising your posts as low carb, you should do more research into low carb eating and meal planning.
    Again, some of the items on your post do appear to be low carb, but you aren't going to eat them with several slices of white bread.

    Bread and tortilla chips are not low carb. Corn doesn't figure in a low carb diet and neither do most types of bread. I suggest you find a better way to calculate carb values. It's not the percentage of carbs that low carbers count, it's the number of grams of carbs. I am pretty sure that sandwich contains way more than 20 grams of carbs, which is the total amount of carbs a serious low carber consumes in an entire day.

    WOW!! *O*M*G!!! It’s 9:15 in the morning and my mouth is watering at the thought of this sandwich!! This is the first time I have been on your blog and I have to say I’m glad I found it! 😀 Just looking at the pictures makes me happy. It looks like I have the same interest in types of food as you. I just wished my hubby liked cheese!!! However I will be making of the recipes you have, even though I will be making two dinners on some nights!!
