Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

You can make the dough ahead of time! If stored in the fridge, I would bake the dough and consume within 5 days. If you store the dough in the freezer it will keep longer. You can roll the dough into a log and store it in the freezer, ready to pull out, slice and bake.

You can replace the all purpose flour with almond flour and you can replace the corn starch with almond flour, both at a 1 to 1 ratio, so: 1 1/4 cup almond flour + 2 tablespoons almond flour. Enjoy!

Can I substitute almond or coconut flour for the AP flour? Also, can I safely eliminate the corn starch? I would like to make these for a group of friends but one of them has an allergy to all types of grain. Thank you.

Divine looking! I am going to try these gluten free since that's my only option for eating. I suspect they won't be as perfect looking as yours, but presentation is way less important than taste! Thank you for a clever and delicious recipe!
