Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

Made this for 2 this past Sunday night. I cooked a large chicken thigh and seasoned with salt, pepper, paprika, onion and garlic powder so it really enhanced the flavor when all the ingredients were combined. Would not recommend a chicken breast. Not nearly as much flavor or as moist. Chicken breasts are way over rated. I doubled the ingredients since this recipe was for only 1 serving and I was cooking for 2. Came out much better than I expected. It was the first time I ever made a quesadilla before. Did a google search on how to do it in the oven because I didn't have a big enough pan for 2 tortillas, and baking is healthier and less caloric than frying. I had some really nice BBQ sauce but felt 4 tbs smothered the other flavors so the next night I only did 3 tbs. Great fusion dish.

Made your recipe for jerk shrimp tacos last night...substituted chicken but followed everything else. AMAZING! Just wondering...with this recipe what brand of BBQ sauce did you use? I don't like most store bought sauces...thanks

This looks great! I've found grilling the pineapple is a great extra step for flavor in recipes I've done that with. I'd be inclined to try that option here, though I suspect either way would be good!

But I'm def. going to try this with a tortilla as the serving vessel. thanks.

My roommates and I were brave yesterday and tried your recipe- instead of bbq (we forgot it at the store) we used a Caribbean-jerk marinade with honey, jalapeno, and cilantro added to it. It was still SO awesome. All 4 of us are firm believers in your blog now!
