This looks like a great recipe. I sort of shy away from the chipotle sauce as I have often had too much heat. I make a simple enchilada sauce that will be perfect for this. Maybe mix in a few canned chilis.

I generally toast them in a pan, but in the oven works as well. I will have to try with 2 hot frying pans!
