Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

i made this tonight and it was absolutely delicious. instead of simmering on the stove, i placed it in a 350 oven without the lid for 2 hours and added the potatoes after one hour. i find this method of cooking is very easy and really condenses the flavors. if it gets too condensed, just add broth to desired taste. i'm looking forward to making this again with the leftover paste that i put in my freezer. thanks for the wonderful recipe !

I use Chile de árbol as they are easily available and you could use milder chilies or hotter ones to taste. If you have access to dried birds eye chilies, use them! ;)
