When I was a kid, I’d sit at the kitchen counter as Mom cooked up big batches of the blintz crepes. As each one was finished, she’d slam the pan on a towel covered spot on the counter to release it. I’d steal one every so often, but I think she knew what I was up to, but as I was a poor eater, I don’t think she minded. BTW: hers were only cooked on one side. The cooked side was filled and the uncooked side would then be fried.
