Especially if you use mozzarella di bufala campana (Campania buffalo mozzarella) which is superb! Here in Italy we use to have caprese almost every day in summer, because it's easy to make and fresh. And most of all because it's so hot outside you don't really feel like cooking! Absolutely perfect.
