Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

This recipe turned out really delicious. Thanks for another winner! Very easy to follow. I will definitely be making it again very soon and I love that you have provided options for stove top, oven and crock pot. Great with some corn tortillas and avocado.

Looks very good! Glad to see the option of using dried chilis, because that is how I was taught to make Mexican food. An idea of how many dried guajillos would be nice, as a jumping off point! Also love that you give so many options/riffs such as the different methods of cooking this. I like the oven method, but others like the slow cooker. Adding potatoes is nice. Thanks for this recipe!
