Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

I loved this but I am a real lemon person. I used the Beyond Meat chicken (8 oz) and followed the recipe as written. Also used Kevin's options...added a drained can of artichoke hearts and used up some sun dried tomatoes packed in olive oil from the fridge. Delicious topped with Romano in individual servings. (I am Italian and prefer Romano to Parmesan.) Thanks, Kevin!
