Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

We had these just the other night, we had to substitute a number of things, but it was delicious. We used corned beef lunch meat, we caramelized the onions but didn't have any Guinness and we used Texas Toast in place of the rye bread, but it was still delicious. The corned beef lunchmeat was thinly sliced, so we loaded the sandwiches up with the onions and it was delicious and went well with sour cream and onion potato chips. Thank you for sharing this recipe, next I hope to try the Corned Beef Cubans, those sound delicious and regular Cuban sandwiches are delicious as well and filling and that sounds like a nice twist.

Marsha Paulsen Peters : Another beer would work. Beef broth would also be a nice and simple substitution. You could also use some of the cooking juices from the corned beef if you roasted on, a broth, or water can be used

I Like your twist on a corned beef reuben sandwich in todya's recipe. Gonna make some of your onions. (I make crock pot-slow coooker carmelized onions. -- I will add Guiness and Worcestershire sauce to my recipe. -- A nearby store puts onions on sale 50 lbs or $8.oo I buy a bag and make 20 pounds of carmalized onion that I eat with LAMB liver----delicious!)
I love reubens, and I am not tied to the traditional presentation. I experienced another twist using a unique bread which pushes this sandwich to ultimate heights. The sandwich is served in a microbrewery in Bloomington, IL. USA. They swap out traditional marbled rye bread with Swiss Muesli Loaf-- made by Eurobake-- St Petersburg, Florida. This has spoiled me on ordering reubens served on rye at any other eating establishment.
The bad news is ...you can't buy this bread in a standard grocery store.  --The good news, If you have a friend in the restaurant business, you can get them to order some through their commercial food supplier....or (as I do) the microbrewery will sell loaves to the public---{I always get a loaf to bring home with me.}
Please research this bread....the internet will give you the ingredients, or call EuroBake and pick their brain. They seem anxious to talk to people who show interest in their products. They are very proud of their baked goods....stroke them a bit. Can you give us your version to bake in our own kitchen. If you take the time to research this bread....you will agree with me. Ramp up your reubens with this bread! It will become a favorite--I guarantee!
