Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

Made this today. Had only Thai curry paste so was a bit cautious, using 2T instead of 3. Worked well; curry blended well with other flavors. Might become a regular breakfast treat! Thanks, Kevin!

Dedra: I am glad that you tried this recipe and that you liked it! The curry works surprisingly well in this otherwise sweet banana bread adding a nice touch of heat and a hint of the exotic!

Hi Kevin! Admittedly I was afraid to try this recipe as soon as I saw the curry. Typically I do not like curry at all! I tend to wrinkle my nose at curry recipes. Being Sunday afternoon and having several ripe bananas and fresh pineapple on hand, my husband and I decided to.go for it. Still being scared of the curry that neither of us care for, I hope you don't mind that we reduced the curry to 1 tbsp and added 1 tbsp of cinnamon. All I can say is that is the most delicious banana bread ever! Amazing! W never would have tried it if anyone else told us about it, but we love your recipes and trust you. Thank you so much for challenging us beyond our comfort zone in the kitchen. Keep up the good work!

I made a gluten free variation on this and added grated cucumber, carrots, and zucchini - it was fabulous! though it didn't look as convincingly delicious as yours.

I just made this. I couldn't really taste the coconut or lime, but it doesn't matter. This bread is sooo good! The banana flavor is more prominent than I thought it would be, which is could. The curry adds the perfect amount of warmth and spice.

I made it low-fat by using yogurt instead of butter, and it worked out fine. I also didn't have any pineapple, so I used apple and raisins. Absolutely delicious. I'll be making this over and over and over.
