Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

Ramps and fiddleheads (BTW, they're Ostirich Furns, the common name for the plant) are often found together on streams in the North Eastern US). Us local foragers often look for both in the same outing. Please respect the plants, it's easy to clean out a location and destroy the wildlife. Chose selectively, and remember that selective harvesting won't hurt the plant but robbing it of all leaves will kill it.

I love ramps and fiddleheads! But I don't want to wait several weeks for preserved lemons. Can I sub regular lemon zest, and if so, how much?<br />Thanks

Claudia: Fiddleheads are only in season for a brief time in spring and I normally find them at farmers markets though occasionally they will make their way to main stream grocery stores. I have not tried 'hunting' for them myself in the wild.
