Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

This was my first time making coconut rice. I think it should be noted that cooking rice in coconut milk is not like cooking rice in straight water. I apparently needed to stir it while it was getting to the boiling point because it burned and then kept boiling like mad even after I took it off the heat. A little burnt tasting but still worked with the dish. Loved the salsa!

This recipe is a homerun! This jerk recipe is the best I've ever had. And I'm not normally a fan of fruity salsas but the sweet cool flavors of pineapple and banana compliment the spiciness of the jerk perfectly. I used habaneros in the jerk and salsa....superb!
