Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

I made this for the second time yesterday (04.07.2025) and accidentally used soy sauce instead of fish sauce, thinking I'd ran out of fish sauce. I did everything else almost the same as the last time.
I prefer the fish sauce to the soy sauce and I don't think I made enough sauce this time, but it still tastes good. Next time.

I made this yesterday (01.30,2024), using lime juice in place of tamarind sauce, brown sugar in place of palm sugar, and chicken in place of shrimp. I also used honey-roasted peanuts, as someone mentioned in one of the comments above. This was delicious, and my guest really enjoyed it too. Another recipe to save & use for future reference. Thank you.

This is the only pad Thai recipe I use. It’s spot on every time. I tend to make a bit more of the sauce just because but otherwise I follow the recipe. I also learned that honey roasted peanuts are a pleasant surprise ingredient too! Great recipe after all these years!!!

I watched a couple of videos on Youtube and then looked at other recipes. But yours is the recipe I used. You gave the ingredients. And then, most importantly, a simple, numbered set of instructions. It made it easy-peasy! Well almost. There's a lot of prep. But the result was delicious. I will keep this to do again for my grandsons. Thank you!
