Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

I made my own peameal bacon, even ground the dried yellow split peas to roll it in. There are several recipes on line. I tried this one but used sea salt, and omitted sodium nitrite. (http://ruhlman.com/2011/02/canadian-bacon-brining-basics/)

Making it yourself allows you to rinse the bacon before applying the peameal to reduce the salt. I got two pork loins, brined them, rinsed well, rolled them in peameal, roasted one with a mustard-maple syrup glaze, and sliced the other to make Kevin's sandwiches. Either way, it was delicious!
