Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

Inspired by your recent recipes, my a friend and I decided to do a pomegranate themed dinner. We did the red wine pomegranate lamb chops with this couscous dish and it was fabulous - the couscous absorbed the red wine sauce from the lamb and the flavors were incredible!

Much to our dismay however, we searched 2 stores and could not find fresh pomegranate. So, we substituted cucumber chunks for the pomegranate seeds in the couscous (we still used the pomegrante syrup in the viniagrette) and it was still really good!

eatingRD: You could use pomegranate juice though it would have a weaker pomegranate flavour. Better yet, you can make your own pomegranate molasses by by reducing 2 cups of pomegranate juice, 1/2 cup sugar and a splash of lemon until it takes the consistency of ta thick syrup, about 1/2 cup.
