These sounded wonderful for my nanny kiddo and I to make but the moment we added the milk to the rest of the wet ingredients it all curdled! We did add a little extra zest (but have done that before when making lemon muffins) and used an electric mixer for the wet ingredients. We checked the milk and it’s not bad and the eggs didn’t seem off either. So do you know what might have gone wrong and what we could do differently to get these to turn out well?
