Since this was written before GF was a huge thing I didn’t use rice flour but GF 1:1 flour….I imagine it has potato starch in it. My boxties took a loooong time to cook through. They tasted great but I think I MAY have had too much potato starch compared to the other ingredients. It took so long I’m considering pouring the leftover batter on to a cookie sheet & baking it. I just don’t have that kind of time. It’s a work in progress.
