					<description><![CDATA[Spinach and feta is my favorite omelette. I always keep frozen spinach on hand for it. I thaw my spinach in the microwave, squeeze it dry. Then I saute it with some garlic and red onion.  Adding chopped sundried tomatoes just sends it over the top. Biting into those sweet chewy tomato bits sends it over the top. Sometimes I substitute goat cheese too ...ahhh heaven!]]></description>
