I have really been into the Greek style spinach and feta combo with fresh herbs such as dill and mint ever since I discovered spanakopita, a Greek spinach pie . I have been remaking those flavours into various different dishes with one of my more recent creations being in the form of a spinach and feta lasagna that was a real hit. I have a fairly long list of different ways that I want to try using the spinach and feta combo and the next one on my list was quesadillas. Quesadillas are great for creating fusion dishes where all you have to do is fill them with the flavours and ingredients from another culture. At their base quesadillas are a crispy toasted tortillas with a cheesy filling and I figured that a spinach and feta filling would work in quesadilla form with a bit of cheese that melts well to hold everything together. For the recipe, I went with a simple spinach, feta and herb mixture and my first choice for the cheese that melts well would be a Greek one such as kasseri but you could easily use mozzarella or some monterrey jack. The spinach and feta quesadillas did not disappoint! The spinach, feta and herb filling was so good all wrapped in melted cheese and warm, crispy tortillas!
Spinach and Feta Quesadillas
Quesadillas inspired by the flavours of spanakopita, Greek spinach pie with spinach, fresh herbs, feta and plenty of melted cheese.
ingredients
- 1/2 cup packed spinach, steamed, squeezed, drained and chopped
- 1 tablespoon herbs (a combination of mint, dill and parsley), chopped
- 1 green onion, sliced
- 2 tablespoons feta, crumbled
- 2 (8 inch) tortillas
- 1 cup kasseri cheese (or mozzarella), shredded
directions
- Mix the spinach, herbs, green onions and feta in a bowl.
- Heat a pan over medium heat, place a tortilla into the pan, sprinkle half of the cheese on the tortilla followed by the filling, the remaining cheese and finally the other tortilla.
- Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.

Sounds like a great quesadilla. I love the balance of the milder cheese against the feta. I imagine that still allows for a nice punch of saltiness to come through, but without overwhelming the spinach.

Spanikopita is made with filo pastry which can be difficult to work with. Puff pastry as long as it is kept cold is very easy to work with but not for this recipe.

Oh Kevin, then you would LOVE visiting South Africa! We have quite a large Greek community and the spinach and feta combo has inflitrated every level of catering. My favourite pizza of all time was spinach, feta and bacon, served in a pizzeria in my home town. The quesadillas look awesome!

Using "fresh" spinach these were really good!! I'm sorry to say that living in the "boonies" the way we do I can only get fresh dill and mint when mine is ready to harvest. So I will try them again. Oh, yes. I did add a pinch of hot pepper flakes. Yum.

my question is…do you think this recipe would be good with Mozzarella? I'm not really the biggest fan of feta. or is there some other cheese you would recommend?

Megan: There is already mozzarella in the recipe though it is more of a binder and it's flavour is a bit mild. I would say that you would want a stronger cheese in there if you are dropping the feta.

Amazing! Tasted like restaurant cuisine! I sauteed fresh mushrooms and an onion along with a bag of fresh spinach leaves and mixed that with the feta and spices. We used monterey jack for the other cheese, they were fabulous! Found you on pinterest!

Anonymous: Quesadillas are best straight from the pan. If you froze them, the tortillas would likely no longer be nice and crispy.

Hey Kevin!!!!!! I tried these last night. Didn't have feta so I used mozzarella with onions and fresh steamed spinach. Seemed a little bland so added garlic and thin slices of ham. Were edible, but the cheese must have been too mild. You are a great cook. Hope you get a bigger kitchen some day. You can come cook with me anytime.

Anonymous: The mozzarella is there because it melts well and a quesadilla needs a nice melty cheese to hold together and the feta is there for the flavour.

I made these for dinner today – and my family LOVED it! It even won over my usually very picky mother. I sauteed mushrooms, onions and garlic together before mixing it into the spinach, placed some fresh diced tomatoes on top and it proved to be a great combination!! The tortilla was crunchy and the inside so gooey – love this recipe!

I made one and split it with my Mom. For small eaters, half of one is enough for a main dish serving! It uses very few ingredients, is a snap to make, and much more substantial than it appears.

Made these fantastic quesadillas yesterday. These were fun to make and easier than Spanakopita. I didn’t have green onions, so I caramelized a regular onion and used Kasseri as it’s easier to find here in Greece. I doubled the recipe but wished I had more filling. My family loved these.
