I am a huge fan of avocados and one of my favourite ways to enjoy them in in guacamole! At it’s base guacamole is mashed avocados seasoned with a balance of salt and lime juice to which I like to add jalapeno, onion and cilantro. I sometimes like to change up my guacamole adding different ingredients (see below for a few tasty guacamole recipes) and a great one in the summer is with the addition of fresh strawberries! I usually add diced tomatoes to my guacamole and it’s really easy to replace them with diced strawberries for this recipe! The flavour combo of the avocados and strawberries is simply magical, and perfect for scooping up with tortillas or just devouring by the spoonful, all summer long!
Strawberry Guacamole
A fresh and bright summer strawberry guacamole!
ingredients
- 2 large avocados, mashed
- 2 tablespoons lime juice (~1 lime)
- 1 jalapeno pepper, finely diced
- 1 cup strawberries, diced
- 1/4 cup red onion, finely diced
- 2 tablespoons cilantro, chopped
- salt to taste
directions
- Mix everything and enjoy!
