Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

This was quite excellent - made it last night with the peanut sauce. Sauce was outstanding and, since I love Asian food, I had all the ingredients for the sauce already. Came together very quickly and was a huge hit!! Only thing we did differently was to grill the pork tenderloin and that added another dimension of flavor. Thanks so much for this recipe!

I made this tonight with a few minor changes:
1) Forgot the carrots at the grocery store
2) I prefer the texture of rice noodles when gave a cold soak rather than a hot soak. You just let the noodles soak longer (45 minutes)

Anyways it was absolutely awesome. I definitely will be adding this to my recipe book. The only small change i would make next time would be to add some hot peppers. I thought it would already be hot with the red curry paste but i would have liked it hotter (i love very spicy food). That being said i would really consider this a traditional thai dish but more westernized...but it really doesn't matter cause it tasted great.
