Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

Kudos to Kevin! I just made this last night and I so enjoyed it! Usually if I have a corned beef I plan to cook - Its a multi step thing - that I tend to put off a few days becuase its first cook the beef, then take it out and put some sort of glaze on it and run it under the oven to make it look prettier, do all the vegetables, in the pot - serve it on a big plate, dish to contain the juices and oh my, just a process. But this soup??
A total breeze!
This is now my way to prepare corned beef from now on instead of the usual Corned Beef Dinner thing.and chasing it all around on a plate -- I love how I can have a bite of all the vegetables and beef and broth in a bowl in one slurp, instead of trying to build it on a fork for that wonderful mouthful. And I made mine in the crock pot as well - prepped veg ahead of time and was qucik to put together and saved on dishes - I made a quick loaf of Beer Bread in the time the vegetables simmered with the soup before serviing. So happy for this recipe.

If you can, make the trip and stock up on a few of them - The soup is so good - I just made it last night-- sooo good and worth it! Deli corned beef just won't be the same - you need all those good simmering juices in it

And for what its worth on adding or not adding the pickling juices from the bag - I do add them, maybe try to pick out and remove the whole pepper corns - but there is good flavor in those juices -I cook the whole.beef first, then remove it and skim out all the coagulated stuiff from it, then chop up the meat add it back to the pot and proceed with the recipe as written. - I love soda bread, but if I have a can of beer on hand, I like to serve a speedy to make & crusty Beer Bread with it too.

A one pound raw corned beef (not deli corned beef that's ready to slice for a sandwich) should be falling apart tender after 2 hours of simmering. A larger piece of meat may take longer. If it's not tender after 2 hours, you can simmer longer.

In reply to <a href="https://www.closetcooking.com/corned-beef-and-cabbage-soup/#comment-98838">Linda G,</a>.

The corned beef here usually comes in a vacuum sealed package with very little pickling juices in it. I generally cut the bag open slide the beef out, dice it and place it into the soup without worrying about the pickling juice/spices. I do not try to reserve the pickling juices to place into the soup. Enjoy!
