I like to put a plate on top of the quesadilla in the pan, hold the plate, flip the pan so that the plate is on the bottom and the quesadilla is on the plate with the uncooked side down, place the pan back on the burner, and slide the quesadilla from the plate back into the pan to cook the uncooked side.
