					<description><![CDATA[I have made this (and several other egg dishes with chorizo).  It is a very tasty sausage and has become more and more common to see in the stores.  I would highly recommend you drain the grease off it before assembling the dish though.  It tends to have a bit more oil/grease than traditional breakfast or Italian sausages do.   
This is a great breakfast casserole, especially if you want someting with a little true Mexican or Southwest kick!  Having been raised in Southern California we had chorizo and eggs often.  I really love the idea of putting all those delicious flavors together in a casserole.  I have even made it up the night before.  Fantastic]]></description>
