Cooking adventures in a small, closet sized, kitchen. - I came to realize that my meals were boring and that I had been eating the same few dishes over and over again for years. It was time for a change! I now spend my free time searching for, creating and trying tasty new recipes in my closet sized kitchen.

We just made this for dinner tonight, oh man, it was so good. It was our first time trying this and we all cleaned our plates. We just changed one thing, we used fire roasted frozen corn, instead of canned or fresh corn, because it was what we found and thought about trying. It was fairly easy to make and went well with seasoned fries. They cooked perfectly together in the oven at the same time and everyone loved the dish tonight. I think we'll be adding this to our monthly menu.

Yes you can use thinner chicken breasts and the baking time would be less, depending on the thickness, maybe about 20-25 minutes.
