I followed the recipe as written except substituted the brie for feta. It did not look as beautiful as your pictures with the brie coating the skillet, but I loved how it turned out. I had no idea bacon and strawberries would create such a balanced flavor.

You can use another soft cheese and it will give a different flavour but most will work well in this! Enjoy!
