You can make these in mini muffin pans; reduce the baking time to about 10-12 minutes. Having said that, one of the best parts of these muffins is that the centers stay nice and moist, like a pecan pie, and the edges get crispier; mini muffin pans will mean less of that moist center and more crispy edges.

Try spraying your muffin tins with PAM for baking cakes. It has a spray of flour in it and makes cake and muffin removal from the tin much easier.
