Pecan pie is one of my favourites so when I came across this idea for pecan pie muffins on pinterest a while ago I knew that I would have to make them! I mean you can’t really go wrong taking the flavours of pecan pie and placing them in muffin form where you can eat them for breakfast! Pecan pie for breakfast! The recipe is so simple with only five ingredients and they only take about 30 minutes so you can easily make them any day of the week. These pecna pie muffins get nice and crispy on the outside but they are moist and tender on the inside, just like a pecan pie; yum!
Pecan Pie Muffins
All of the flavours of Pecan Pie Muffins in muffins that are so easy to make! The perfect way to enjoy pie for breakfast?
ingredients
- 2/3 cup unsalted butter
- 1 cup packed brown sugar
- 2 eggs, lightly beaten
- 1/2 cup all-purpose flour (or rice flour for gluten-free)
- 1 cup chopped pecans
directions
- Melt the butter an sugar in a small sauce pan, let cool and mix in the eggs followed by the flour and then the pecans.
- Divide the batter between 12, greased, muffin holes in a muffin pan and bake in a preheated 350F/180C oven until the muffins are lightly golden brown and a toothpick pushed into the center comes out clean, about 15-20 minutes.

Are you using regular muffin tins or the mini ones? I can’t really tell from the picture. I’m thinking it’s the regular one but not sure. They look DELICIOUS!

Kevin, I’ve made these now quite often since first posting in Feb. In fact they don’t run out before another batch is in the oven. However, I have a question. In looking at your pictures, yours seem to rise more than mine. I can’t get them more than about 3/4 of what yours seem to get. Now, my pan cups are about three inches diameter at the tops and about 1 1/4 inch deep. I’m making them EXACTLY according to recipe. When filling the cups, the recipe as written JUST ABOUT gives me a bit over 1/2 cup batter in the 12 cups.Are the cups in your pan smaller therefore filling up more than mine?
They taste awesome so it’s not a major big deal, just curious.

Hi Gus! I’m glad that you like them! I just measured my muffin pan and it is 2 inches at the bottom, 2.5 inches at the top and it’s 1.5 inches tall. These muffins only rise a little.

Thanks Kevin for the feedback. I wasn’t worried because as I said these babies are to die for. It was just a point of curiosity. NOBODY that has tried them has complained about how tall they are !!
My pan, being about 1/2 inch wider at the top , is resulting in a wider shorter muffin. Fortunately, my mouth and stomach can’t tell the difference.

I just made these. I added chocolate chips because I think that’s a good addition and I used a mini muffin tin because the measurements of the tin used in the recipe was smaller than my regular size muffin tin. They are yummy.

They were wonderfully tasting but i had a very hard time getting them out of the pan. I sprayed generously with Pam but still did not come out nicely in one piece. Suggestions!

Try spraying your muffin tins with PAM for baking cakes. It has a spray of flour in it and makes cake and muffin removal from the tin much easier.

You can make these in mini muffin pans; reduce the baking time to about 10-12 minutes. Having said that, one of the best parts of these muffins is that the centers stay nice and moist, like a pecan pie, and the edges get crispier; mini muffin pans will mean less of that moist center and more crispy edges.

Just made these muffins because they look so good, and are easy to make. While they taste very good, they do not rise because they have no baking powder, and come out like muffin tops, not muffins.
